In this episode I speak to Josh Specht, historian of cattle and capitalism and author of Red Meat Republic: A Hoof-to-Table History of How Beef Changed America, about the history of the industrialisation of beef in the USA.

We speak about the development of the meat packing industry in the late 19th and early 20th centuries, from the Great Plains to the Union Stockyards. This is a story of human, animal and environmental hardship, as well as one of identity and modernity.
