

Ice Ice Maybe: What’s Really Under Antarctica?

The Ice Wall (Antarctica Cocktail)
INGREDIENTS
• 1.5 ounces coconut rum
• 1 ounces blue curaçao
• 2 ounces pineapple juice
• 0.5 ounces cream of coconut
• 4 ounces crushed ice
• 1 tablespoons white sanding sugar (for rim)
• 1 lime wedge (to wet rim)
• 1 small edible 'iceberg' garnish (white rock candy or clear ice chunk)
STEPS
1. Prep the ice-wall rim: Run 1 lime wedge (to wet rim) around the rim of a glass, then dip the rim into 1 tablespoons white sanding sugar (for rim) to create a frosty white 'ice wall' rim.
2. Blend the base: Add 4 ounces crushed ice to a blender with 1.5 ounces coconut rum, 2 ounces pineapple juice, and 0.5 ounces cream of coconut. Blend until smooth and slushy.
3. Pour the base layer: Pour the blended mix into the rimmed glass, filling about 3/4 of the way.
4. Add the crevasse layer: Slowly pour 1 ounces blue curaçao over the back of a spoon on top so it sinks partway through, creating a deep blue 'crevasse' effect instead of mixing evenly.
5. Garnish and serve: Top with 1 small edible 'iceberg' garnish (white rock candy or clear ice chunk) balanced on the rim or floating on top, like an iceberg breaching the wall.
