I read from entorhinal to entrecôte.
The entorhinal cortex seems pretty important. It's "a widespread network hub for memory, navigation, and the perception of time."

"Entrechat" really just means "intertwined". I'm still not sure about the "capriola".
But I did learn that "capriola intrecciata" in Italian could also mean "braided somersault" so that's fun.
