Have you ever opened the washing machine and discovered a tissue went through the entire wash? Suddenly every dark piece of clothing looks as though it has been caught in a snowstorm. You pull out one shirt. Covered. Another shirt. Covered. By the fourth one, you're no longer doing laundry. You're reconsidering every decision you've made since breakfast. That, my friends, is when we need to be Fearless. Today’s featured coffee is Fearless, our dark, earthy espresso-style coffee for those mornings when you want a cup with a little more boldness. And our coffee fact today is about something roasters listen for: the crack. As coffee beans heat during roasting, pressure builds inside them and they expand. At a certain stage, roasters can hear popping sounds commonly called first crack. It can sound a little like popcorn popping. This is one of the cues a roaster can use—along with temperature, time, aroma, color, and experience—to judge how the roast is progressing. Continue roasting and the coffee develops further, eventually moving toward darker roast characteristics. Isn't that fascinating? Somebody had to learn how to listen to coffee. Meanwhile, some of us can't hear the microwave beeping when we're standing three feet away. Fearless, is for those days when you need to put your shoulders back and tackle whatever is waiting.
