In the Kitchen - Rainy day dishes

I am forced into the kitchen today as the weather is not pleasant enough for any outdoor shenanigans. So today I have two dishes for you; apple compote and a sweet potato and mushroom flan. For the compote: 4x cooking apples, brown sugar cinnamon. For the flan: 3x medium sweet potatoes, 1x punnet mushrooms, frozen peas, 5x eggs, grated cheese, red onion

In the Kitchen - Mushroom pasta bake experiment

It's experimentation time! Inspired by the making of sauces with beans I decided to try out baked bean pasta sauce for this dish. And I am glad to say it is a success. Super healthy, super tasty. 500g fusilli pasta, 2 punnets mushroom, 2x onions, sage, 1x tin baked beans, 1x tin chopped tomatoes.

In the Kitchen - Sweet potato & coconut Thai soup

It's another version of sweet potato soup! This time with silky smooth coconut milk and Thai red curry paste. So tasty! Great if you like it spicy. 6x sweet potatoes, 2x carrots, 2x onions, garlic, Red Curry Paste, 1x tin coconut milk, 1x tin each of sweetcorn and chickpeas
