In the Kitchen - Chimichurri
Join me while I make a lovely, healthy parsley chimichurri. This versatile mix can be used in a variety of ways, from marinade to sandwich filler or to use as a dip. It is so tasty. And because it derives from South America it needs to pack a little heat! This basic version is made with fresh parsley, oregano, garlic, chili, olive oil & white wine vinegar. (If possible to be made with all fresh ingredients, unfortunately today I had to use dried oregano). It is, however, one of those dishes which can be added to and altered to your taste or with whatever you have in the kitchen. A red version is made by adding roasted red peppers which gives it a sweeter flavour.
Ambient - A Walk on the WAW
Join me for a peaceful walk along the Wild Atlantic Way on the West Coast of Ireland. Over 20 minutes of lapping waves and children playing. Transport yourself to a calmer place.
In the Kitchen - Cupboard Curry
Join me while I rustle up a curry from bits and pieces I have lying around the kitchen. Leftover roast chicken, onion, garlic, baby potatoes, mushrooms, baby peppers, peas (frozen), chickpeas (tinned), lentils, chopped tomatoes, Murgh Cholay spice mix.

Join me in the kitchen while I prep and cook a tasty one-pot slow cook dish for a chilly March evening. 8 chicken thighs, baby potatoes, carrots, onions, peas, lentils, tomatoes, stock.
In the Kitchen - Mushroom pasta bake
Keep me company while I make a tasty mushroom pasta dish that is really easy (if a bit longwinded!) 3x punnets of mushrooms, 1x punnet baby plum tomatoes, large block of feta (400g), pasta of your choice, tin of tomatoes, pasta sauce

Take a walk with me around the garden while I do a few jobs that need to be done.
Ambient - Songbirds (but different)
Today I have an ambient experience with a difference. I was lucky enough to attend a community concert that was held in a local library so the quality of the sound may not be on a professional level, but… imagine yourself in the room and immerse yourself in the joy these songs are giving to those listening. The first two songs are sung by Mini Byrne with piano accompaniment by Angela Reynolds, the musical director for the community singing group, the Songbirds. The Songbirds is an all-female group made up of members around Ballymahon, County Longford and has been established since 2023. Tommy Reynolds also adds his wonderful voice for this special occasion for a few toe-tappers. I hope you enjoy a little departure from the norm.
In the Kitchen - Gazpacho!
Join me while I create a no-cook wonderfully refreshing summer soup that you keep in the fridge and have cold. Gazpacho is made with fresh, raw ingredients and tastes like summer. 1x cucumber, 1x tin chopped tomatoes, 1x red bell pepper, 1x red onion, 2x slices bread, garlic, red wine vinegar Apologies for the static (I forgot to put my equipment on airplane mode!)

Join me in the kitchen while I throw together a really easy salad from common kitchen ingredients. It is healthy and nutritious as well as being delicious and customisable. Chickpeas, cucumber, cherry tomatoes, olives, red onion, dressing.
In the Kitchen - Shepherdless Pie
Join me while I cobble together a vegetarian shepherd's pie with bits and pieces I have in the store cupboard and in the vegetable drawer. Potatoes, carrots, onions, soya mince, 2x tins of mixed beans, grated cheese.
